Cowboy Butterscotch Oatmeal Cookies

Ingredients:

2 C All-purpose flour
1/2 t Baking powder
1 t Baking soda
1/2 t Salt
1/2 C Butter
1/2 C Vegetable oil
1 C Brown sugar, packed
1 C White sugar
2 Eggs
2 C Oats
1 C Butterscotch chips

Directions:

Preheat oven to 350 degrees. 

In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside. 

In a mixing bowl, cream together butter, oil, brown sugar, and sugar until smooth. Beat in eggs one at a time. 

Gradually beat in flour mixture until well-blended. 

Mix in oats and butterscotch chips. 

Drop by spoonfuls onto ungreased cookie sheet. 

Bake 10-12 minutes or until edges are golden. 

Remove from oven. Allow to sit on cookie sheet for a few minutes. Transfer to wire cooling rack.
