Ingredients:
1 Pound ground beef
1 Medium onion, chopped
3 Garlic cloves, minced
1 T Olive oil
4 C Cubed peeled butternut squash
2 Cans (14-1/2 ounces each) Italian diced tomatoes
1 C Shredded carrots
1/4 t Oregano
1/4 t Basil
1/4 t Parsley
1/2 t Salt
1/4 t Pepper
Cooked rice
Directions:
In a skillet, saute beef, onion, and garlic in oil until meat is done and onion is tender.
In a baking dish coated with cooking spray, combine the squash, tomatoes, carrots and seasonings. Stir in the beef mixture.
Cover and bake at 350° for 60-70 minutes or until squash is tender.
Serve over rice.
