Ginger Cookies

Ingredients:

3/4 C Shortening
1/4 C Molasses
1 C Sugar (plus more for dipping)
1 Egg
2 C Flour
1 1/2 t Ground Ginger
1 t Ground Cinnamon
2 t Baking Soda
1/2 t Salt

Directions:

Preheat oven to 350 degrees. 

In a mixer, combine shortening, molasses, sugar, and egg. 

In a separate bowl, combine flour, ginger, cinnamon, baking soda, and salt. 

Add dry ingredients to wet ingredients and mix. 

Roll into 1-inch balls, dip tops of balls into sugar, and place on lightly greased cookie sheet about 1 1/2 inches apart. 

Bake 12-15 minutes. 

Remove to cooling rack. 

Yield: About 30 cookies
