Easy Coconut Flour Pumpkin Bread

Ingredients:

1 C Pumpkin puree
1/2 C Coconut flour
5 Eggs
1/4 C Butter, softened
1/3 C Maple syrup
1 t Vanilla
1 t Baking powder

Directions:

Preheat oven to 400 degrees.

In a large bowl, mix together all ingredients.

Spoon into greased 8x8 pan. Bake for 20 minutes or until set.

Note: For a fun twist, stir in 1/4-1/2 C dried cranberries, date crumbles, raisins or chocolate chips before spooning into baking dish.
