2 C Finely Diced Green Tomatoes
1/2 T Salt
1/4 C Butter, softened
1/2 C Sugar
1 Large Egg
1 C All-Purpose Flour
1/2 t Ground Cinnamon
1/2 t Ground Nutmeg
1/2 t Baking Soda
1/8 t Salt
1/4 C Raisins
1/4 C Chopped Walnuts or Pecans
Directions:
Measure tomatoes into a medium bowl. Sprinkle with salt. Let stand for 10 minutes.
Rinse with cold water in colander and drain.
Preheat oven to 350 and grease an 8x8-inch baking dish or cake pan.
In a large mixing bowl, cream together butter and sugar.
Add egg and beat until creamy.
In a separate bowl, mix together flour, cinnamon, nutmeg, baking soda and salt. Stir in raisins and nuts.
Add dry ingredients to wet and mix well.
Thoroughly mix in drained tomatoes.
Pour into baking dish and bake for 30 minutes, or until tester inserted in center comes out clean.
